Xanthan gum food grade is a high molecular weight polysaccharide with excellent properties. It can be used as a rheology control agent in aqueous systems and as a stabilizer for emulsions and suspensions. Suggested applications include: salad dressings, baked products, soups, sauces, gravies, canned foods, beverages, frozen foods and icing, desserts and ice cream.
What is xanthan gum?
Xanthan gum is a popular food additive, usually added to food as a thickener or stabilizer.
It is produced by the fermentation of sugar by a bacteria called Xanthomonas campestris. After the sugar is fermented, a broth or viscous substance is formed, which can be made solid by adding alcohol. Then it is dried and turned into powder.
After adding xanthan gum powder to the liquid, it will quickly disperse and form a viscous and stable solution. This makes it an excellent thickener, suspension and stabilizer for many products.
Scientists discovered it in 1963. Since then, it has been thoroughly researched and its safety has been determined. Therefore, the FDA has approved its use as a food additive, and there is no restriction on the content of xanthan gum in food.
Even if it is made in the laboratory, it is a soluble fiber. Soluble fiber is a carbohydrate that the body cannot break down.
Instead, they absorb water and turn it into a gel-like substance in the digestive system, thereby slowing down digestion.
