    Introduction to carboxymethyl cellulose


    Carboxymethyl cellulose, white flocculent powder, odorless, tasteless and non-toxic. It is easily soluble in water and forms a transparent colloidal liquid with neutral solution.

     

    Stable to light and heat. It is hygroscopic. It is insoluble in acid, cresol, ethanol, acetone, chloroform, benzene, etc., but insoluble in methanol and ether.

     

    Cellulose derivatives having carboxymethyl substituents are prepared by treating cellulose with sodium hydroxide to form alkaline cellulose and reacting with chloroacetic acid. The glucose unit constituting cellulose has three replaceable hydroxyl groups, so products with different degrees of substitution can be obtained.

    Scope of application:

     

    The amount of soy milk, ice cream, ice cream, jelly, beverages and canned food is about 1% to 1.5%. CMC can also be mixed with vinegar, soy sauce, vegetable oil, fruit juice, gravy, and vegetable juice to form a stable emulsion dispersion, and its dosage is 0.2%~0.5%. In particular, vegetable oils, proteins and aqueous solutions have excellent emulsifying properties, which can make them form homogeneous emulsions with stable properties.
